Meal prep, I know it can be taxing, messy, drawn out, whatever, but DAMN is it a great way to stay on top of your goals. I personally don’t have a set meal prep day anymore, nor do I make a whole heap of food for the week, but I try to have easy to make items readily accessible.
An easy go-to meal that I always find myself making is some combo of protein, veggies, and carbs. This guy below literally took me about 15 minutes to make. (Psst– I post a lot of my food to my Instagram stories and ‘My Meals’ highlight cover if you ever need some quick meal prep ideas!)
Here are a few examples:
Protein: chicken, turkey burgers, salmon patties, ground turkey/beef, fishy fishy
Carbs: Jasmine rice, red potatoes, sweet potatoes brown rice, paired with some veggies and a carb source like rice or potatoes if I’m really hungry.
Veggies: Green beans, brussel sprouts, asparagus
So how do we make this meal in about 15 minutes!? This is what I usually do:
- Turn the burner on high. Measure your water out for your rice. Dump in your rice. Put the lid on. Once it starts to boil turn it down to med/low heat. ORRRR, hold up wait a minute– buy the 90 Second Uncle Ben’s Rice and never bother with a boiling pot of water again! CONVENIENT but less cost effective.
- Turn second burner on med/high (once the meat starts cooking you can bring it down to medium) Spray the pan. Butterfly your chicken breast aka hold the knife along side of it and then saw the breast in half! Place in pan. Put the lid on. Flip after a couple of minutes. If you’re making ground beef or turkey, place the hunk of meat in the pan and then break it down into little crumbles so it cooks faster!
- I’ve been buying frozen veggies and microwaving them for about 2 minutes. EASY PEASY. I also used to microwave my fresh asparagus when I was short on time, don’t judge me.
THERE YA GO! QUICK AND EASY! I’ve learned through many years of trial and error that not everything has to be super complicated, especially our food 🙂 This style works for me because 1. I’m impatient and 2. I’m usually starving by time I go to make it hehe. My meals are pretty simple, but I do love them very much mhm mhm. I hope this helped, friends!!
